I know Thanksgiving dinner hasn't happened yet, but I'm already looking forward to the best part of TG being done: leftovers!!! I feel really bad for the turkey because even though it's the "symbol" of Thanksgiving, honestly everyone is way more excited about the sides. Every year, TG comes and goes, the leftover sides are gone in a matter of days, but the turkey prettttyy much just sits in the fridge until it eventually just gets tossed out. What a waste. I hate throwing food away! So I decided to whip up a little something special for you to enjoy your leftover turkey with. I'm calling it my Thanksgiving Special Sauce, for serious lack of a better name. All you have to do is smear this onto some bread, layer up some turkey, leftover stuffing, drizzle some gravy, cheese of your choice and voila! The best leftover turkey sandwich you've ever had. You're welcome. You can even add some fresh rosemary sprigs and warm it up in a panini grill to give it that extra something. I personally think it's the best warm. Also, I apologize for the lack of photos in this post...the new puppy has got me running around all day and there was no time to stage some pretty pics. But I had to share before Thanksgiving passes! Recipe below!
- Mayonnaise - 1/2 cup
- Cranberry Sauce (canned) - 8oz
- 2 garlic cloves, minced
- 1/4 onion, chopped
- 1/2 teaspoon fresh thyme, chopped
- 3-4 leafs fresh sage, chopped
- Cracked black pepper to taste
Heat a non-stick pan to medium heat with 2 tbsp of olive oil. Once heated, add the garlic and onion and allow to simmer until fragrant, about 2 minutes. Add in the chopped herbs and simmer for another minute. Turn heat off, set aside and allow to cool. In a separate bowl, whisk together the cranberry sauce and mayonnaise until completely blended and smooth. The portions of mayo and sauce can be adjusted based on how creamy or how sweet you want the spread to be. Fold in the herb mix aaaaand enjoy!
